La moda sense gluten posa en risc als cel\u00edacs"},"content":{"rendered":"<p style=\"text-align: justify;\"><span style=\"font-family: verdana, geneva, sans-serif; font-size: 10pt;\">Des de <strong>Cel\u00edacs de Catalunya<\/strong>, continuem treballant en el projecte RESTAURACI\u00d3 perqu\u00e8 cada dia puguem gaudir de m\u00e9s establiments alimentaris amb productes <strong>sense gluten<\/strong> segurs, sensibilitzant primer, assessorant i formant al restaurador (servei gratu\u00eft) despr\u00e9s, en els protocols a seguir a cuina i sala, per garantir la <strong>seguretat aliment\u00e0ria<\/strong> d\u2019aquests. <!--more-->La creixent demanda d\u2019opcions <strong>lliures de gluten<\/strong> per consumidors que no s\u00f3n cel\u00edacs ha generat un augment d\u2019establiments que ofereixen aquest servei sense garanties de seguretat. Aquesta <strong>banalitzaci\u00f3<\/strong> de la dieta, genera confusi\u00f3 en el sector de la restauraci\u00f3 i a m\u00e9s provoca que els restauradors compromesos vegin infravalorat l\u2019esfor\u00e7 i dedicaci\u00f3 que suposa treballar per al col\u00b7lectiu cel\u00edac. Segons aquest Reglament s\u2019ha d\u2019especificar a l\u2019etiqueta els ingredients considerats al\u00b7l\u00e8rgens, hi ha 14 obligatoris i entre ells el gluten. La problem\u00e0tica que suposa aquest reglament \u00e9s que t\u00e9 en compte els al\u00b7l\u00e8rgens en origen (\u00e9s a dir, quan s\u00f3n ingredient principal) per\u00f2 no \u00e9s obligatori declarar-los si els cont\u00e9 a causa d\u2019un proc\u00e9s de <strong>contaminaci\u00f3 encreuada<\/strong> durant la fabricaci\u00f3. Per aix\u00f2 recomanem consultar els <a href=\"https:\/\/www.celiacscatalunya.org\/ca\/establiments_certificats\">establiments acreditats<\/a> a la <a href=\"https:\/\/www.celiacscatalunya.org\/ca\/Celiacs_Catalunya\">APP Cel\u00edacsCatalunya <\/a>i a la nostra web per tal de tenir la informaci\u00f3 m\u00e9s actualitzada.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: verdana, geneva, sans-serif; font-size: 10pt;\">Som conscients qu\u00e8 hi ha moltes zones que no tenen cap establiment acreditat, estem treballant intensament per tal d\u2019augmentar el nombre d\u2019establiments.
